Located at 18 Moo 1, Tambon Tham Sing, Amphoe Mueang Chumphon, Ban Tham Sing is the first place in the southern region to produce high-quality Robusta coffee that has no sour taste. The process begins with selecting seeds to grow local Robusta seedlings, which are cultivated in the Tham Sing area. Locals refer to this place as "Tham Sing Red Soil," as the volcanic red soil here is ideal for growing Robusta coffee and producing abundant fruits due to the rich soil and favorable climate. The production of Tham Sing coffee is meticulous at every stage. It starts with harvesting ripe red coffee cherries, which are then floated in water to separate any defective beans. Next, the outer husk is removed, and the coffee beans are cleaned. Afterward, they are dried on trays in a solar dryer, ensuring that the beans are protected from rain and prevent fermentation, which can lead to mold growth. The moisture content is carefully monitored to remain below 8%. Once dried, the beans are stored in jute sacks and aged in a well-ventilated warehouse for at least a year. They are then hulled to sort the beans by size before being roasted in a closed system with controlled temperature and timing to achieve the specific intensity standard for Tham Sing coffee. When brewed, it yields a rich, aromatic coffee characteristic of the Robusta variety.
