The large chicken drumsticks are marinated with a variety of spices, stir-fried with curry paste, and simmered in coconut milk to achieve a deep, rich flavor that penetrates the meat, infused with the fragrant spices. Served with blanched rice noodles and topped with crispy noodles, it is then drenched in a curry sauce seasoned with various northern Thai spices. Accompanying this dish are several side ingredients, including sliced shallots, pickled vegetables, lime, and, most importantly, our homemade fried chilies blended with spices to enhance the heat and add a unique aroma.
